It’s Jack-O-Lantern season! Consider making the most of the Paleo treat you can find inside every pumpkin: SEEDS!  Here’s the recipe our family used to make our own version of the healthy fall snack.

Ingredients:
Pumpkin seeds
Coconut oil
Lawry’s seasoning salt
Pumpkin pie spice
Nutmeg

Directions:
Separate seeds from flesh and wash. Spread on cookie sheet. Melt 3 tbsp of coconut oil and drizzle over seeds. Sprinkle seeds with spices and stir. Bake at 200 degrees for 1 hour and 10 mins. Stir during cook time. Keep a close watch – you don’t want to over bake them. Remove when crisp and golden-brown. Enjoy!
