…..Cook dinner in the Crock Pot! No, we’re serious.  Since the onset of our Paleo challenge the Rosa’s crock pot has seen a lot of action.  A lot.  And a welcomed side affect just so happens to be lower stress over dinner time! There’s truly nothing better than dinner cooking itself, and that’s pretty much how it goes.  Lately, Coach Sophia has been throwing frozen meat, water, spices, veggies and some oil into the crock pot around 10 am and like magic dinner is ready at 7. Here’s today’s succulent recipe:

1 Enormous frozen bone-in pork shoulder (Farmer Nick’s)
1 Pineapple (cut into rings)
1 Yucca root (peeled and cut into 2 inch pieces)
1 Cup Water
Adobo – cover the whole thing
Kenny’s Raspberry Chipotle seasoning – cover the whole thing
1/4 Cup Coconut Oil

Throw it all in there. Turn it on. Eat about 8 hours later.
